Avalanche Rice Crispy Eggs

We are officially on the Easter holidays which for me means a few things.

  1. No preschool run for TWO WEEKS! – Yay
  2. No preschool for two weeks – BOO! (Send help)
  3. This signifies the start of Ellie’s last term before she starts school – Sad times
  4. It’s Easter. Easter = Chocolate! And bloody lots of it.

If like me you have failed to stick to the Lent tradition of giving something up. And if, like me, you have never given up chocolate in your life (nor would you… Crazy people!) Then this post is for you!

This is a great activity to do with your kids during half term. All you need aside from a bowl and the ingredients are some plastic egg moulds from Hobbycraft (not a sponsored post I simply walked in and found them).

Of course you could make these without the egg moulds, in which case they would be No Bake Avalanche Crispy Cookies (just in case you were wondering.)

Recipe

Avalanche Rice Crispy Eggs

Ingredients

  • 300g White Chocolate
  • 80g Peanut Butter (smooth is preferable)
  • 30g Caramel Sauce
  • 20mls Milk
  • 300g Rice Crispys

Instructions

  1. In a heat proof bowl, over a saucepan of simmering water, add the white chocolate.
  2. Once the chocolate starts melting add in the peanut butter.
  3. Mix until all melted and combined.
  4. Add in the caramel (it will look a lot like fudge at this point).
  5. Mix in the milk until a smooth sauce forms. Add more milk if needed to thin out more.
  6. Add the rice crispies and mix until the crispies are well covered.
  7. Lightly grease the moulds with oil or melted butter. (I use a baking spray)
  8. Spoon in the mixture to the top and bottom of the egg mould.
  9. Put the two halves together then leave it to set in the fridge for a couple of hours
  10. Remove from the fridge and take out of the moulds.
  11. Et Viola!

They really are that easy and that delicious! I have only just discovered white chocolate and peanut butter as a combination but I feel I have been missing out my whole life.

Strictly speaking Avalanche cookies don’t have the caramel or milk in them but I find them a delicious addition.

    These look delicious!! I like peanut butter and chocolate although my husband isn’t really a fan.
