When the weekend arrives and there is nothing in the diary what else can the girls and I do? Bake of course! Well me and Ellie anyway, Trixie was asleep for this delight. Hubby’s favourite sweet treat that I make are my brownies. They are so quick and easy to make and I have done it so many times I could do it with my eyes closed now. Each time I make them now I try and improve on them, or modify them. I have make Chocolate Orange Brownies, Billionaire Shortbread (millionaire shortbread but with a brownie base), Marshmallow Brownies and lots more. This time I could resist giving Brookies a go. Brownies with cookie in.
There is no right or wrong way to make this. You could do layers. You could fill the cookie with brownie or vice versa. I chose to make the brownie with dollops of cookie dough added to it before baking. These were so easy to make, Ellie was able to do most of it with minimal supervision.

Ingredients
- 200g Dark Chocolate
- 325g Caster Sugar
- 170g Butter
- 130g Plain Flour
- 3 Eggs
- 150g Plain Flour
- 85g Softened Butter
- 150g Demerara Sugar
- 100g Chocolate Chips (I used 50:50 milk and white)
- 1 Egg
- 1/4 tsp Bicarbonate of Soda
Instructions
- Pre-heat the oven to 170 degreesC
- Line a 15cm/30cm tin with greaseproof paper.
- Cream together the butter and sugar.
- Add in the egg and ensure well mixed.
- Mix in the flour and soda to form a dough. (I don't sieve the flour but obviously you can if you want to).
- Stir in the chocolate chips until evenly dispersed.
- Wrap in clingfilm and leave to rest in the fridge whilst you make the brownie.
- In a heatproof bowl over simmering water (ensure the bowl doesn't touch the water) melt the dark chocolate and butter together.
- Add the sugar and mix well.
- Add the flour and mix well.
- Add the eggs. Ensure this is very well mixed together.
- Pour into the prepared tin.
- Take the cookie dough out of the fridge.
- Break the dough up into small chunks and add to the brownie mix. Push the chunks into the mix as far as they will go. They will likely sit near the top of the mix.
- Bake in the oven for 30-35 minutes.
- Leave to cool slightly then transfer to a wire rack to cool completely.
- Cut into squares ready to eat.
