I recently baked some delicious caramel filled apple and cinnamon cupcakes mostly for the sake of it and in part for a school bake sale. Part of the recipe was real caramel which I added to the middle of the cupcake. The recipe I used is a really easy, perfect 15 minute caramel.

Easy Peasy…

Many people think caramel is really difficult to make but this is actually a misconception. The only equipment you need are a heavy bottomed pan, a whisk and some scales. It is important to remember not to stir the sugar whilst it is melting or the caramel will go grainy.

Please be careful whist making this as hot sugar causes very nasty burns if you don’t watch out.

Instructions
  1. Measure out all the ingredients ready for use.
  2. In a heavy bottomed saucepan add the sugar and the water. Over a medium heat leave the sugar to fully dissolve. (Do not stir the mixture!) Turn up the heat and leave to bubble for a few minutes until golden brown.
  3. Once the sugar is completely dissolved add the butter and whisk until combined.
  4. Turn off the heat and add the cream, again whisking until combined.
  5. Leave to cool before storing in a jar in the refrigerator. This will keep for 1-2 weeks and can be gently reheated if required.
