I love granola. To be honest I love anything oaty. The two issues I have with granola is the cost of it from the shops and how bland it can be. So when I realised you could make your own I had to have a go. As part of my Veganuary Challenge I have been trying to find good breakfasts to start the day with. I have been making this recipe for a long time so I was very pleased to realise that this is in fact Vegan Granola.

Adapt To Your Taste

This is really easy to make and it keeps for ages in an airtight container. The other joy with this recipe is that it is completely adaptable to your own tastes…. Don’t like almonds? Add pistachios. Doesn’t need to be vegan? Add honey instead of maple syrup. Don’t have coconut oil? Use olive oil.

It is your granola so make it how you like it.

This is how I like it, and having made it a lot of times in the past, I have perfected it to my taste buds.

I serve this with a chia pudding or soya yogurt for breakfast.

Instructions
  1. Preheat the oven to 160 degreesC
  2. Line a baking tray with grease proof paper.
  3. Put all the ingredients in a large bowl and mix well.
  4. Pour onto the baking tray and cook for 40 minutes or until golden and crispy. Give the granola a mix on the tray every 10 minutes to ensure even cooking.
  5. Leave to cool before serving.
  6. Store in an airtight container.
